BLACK MAGIC CAKE by Cyndi Greene (You and your child will love this recipe)
1 3/4 cup White Rice Flour
1/4 cup Cocoa
2 cups Sugar
2 teaspoons Baking Soda
1 teaspoon Baking Powder
1/2 cup Oil
1 1/2 teaspoon Xantham Gum
1 cup Black Coffee
2 Eggs or Egg Substitute
1 teaspoon Vanilla (optional)
1 cup Milk Substitute-(soured with lemon juice)
Mix all dry ingredients. Mix all wet ingredients. Combine all dry and wet ingredients. Put in a 9" X 13" baking pan and cook at 350 degrees for 35-40 minutes. You and your child will love this recipe.
LANEY'S BAKED BEANS by Elaine Dow (This recipe is so good, it has been borrowed by many restaurants)
2 cans (28 oz. each) Bush's Baked Beans
7 Tomatoes, scalded, peeled and chopped
1 medium Onion - chopped coarse
1 teaspoon Mustard
1/2 cup Ketchup or BBQ Sauce
1/2 box Brown Sugar
1/2 cup Dark Karo or 1/2 cup Pancake Syrup
1/2 pound BaconS
Slightly drain beans and pour into a 13" X 9" baking pan. Add all ingredients EXCEPT bacon. Bake at 350 degrees for one hour. Turn down oven to 325 degrees, stir, and bake another half hour. Stir again, lay bacon (cut into 2" pieces) and return to oven. Bake another 45 minutes.
Red Roasted Potatoes by Elaine Dow ( A staple to almost every meal)
3 pounds Red Potatoes
1/3 cup Oil
1 teaspoon Garlic Salt
1/2 teaspoon Black Pepper
1 teaspoon Seasoned Salt
1 teaspoon Dry Parsley
1 teaspoon Dry Thyme
Preheat oven to 425 degrees. Wash and cut potatoes into 1 1/2 inch pieces. Line 13" X 9" baking pan with foil. Coat half of the oil on the bottom. Put in potatoes, spices and drizzle remaining oil on top, toss and cover with foil. bake for 45 minutes, remove foil, stir and bake for 30 more minutes.
